A Dream That has
Been Cooking for Years...
In the early 1920s, Italian Immigrants found jobs working in the Chicago meatpacking district. As a special bonus, the workers were sometimes rewarded with less desirable and tough cuts of beef to take home. In an effort to tenderize and season these cuts, the families would slow roast the beef for hours in a highly seasoned au jus.

According to Chicago history...the Italian Beef Sandwich is said to have been commercialized in 1938…
But rumor has it "Ferraro Catering," which was established in 1935, began catering a PREMIUM version of this iconic Chicago food staple 3 years prior.
